This is a great dressing for pitta dosha in the summertime.
1 cup raw sunflower seeds
½ cup chopped fresh coriander (cilantro)
½ cup sunflower oil
¼ cup lime juice
1 teaspoon coriander seeds, freshly ground
1 teaspoon fennel seeds, freshly ground
½ cup water
salt, to taste
Combine ingredients in a blender and mix until smooth. Serve on a salad or steamed vegetables.
