Refreshing Coriander Salad Dressing

A simple house vinagrette with spices that enhance digestion. Kapha can substitute sunflower oil for olive oil. Pittas may prefer lime to lemon.

  • 1/4 cup olive oil
  • juice of 1 lemon or lime
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon, freshly ground coriander
  • 1 tablespoon, freshly ground fennel seed
  • 1/3 teaspoon salt (or to taste)

Mix together the ingredients in a glass jar, and let it sit for 20 minutes – 1 hour before serving, allowing the spices to aborb some of the oil. Toss on a salad and enjoy.
