Steamed Beets with Coriander, Lemon and Ghee

Ayurveda recommends cooking beets to make them more digestible. They are great for nourishing the blood, cleanse the liver and support healthy blood pressure and circulation. Beets are also considered sattvic, meaning that they support a calm and balanced state of mind. This recipe is balancing for all 3 doshas. Serves 4-6

Ingredients:

  • 4 cups raw beets (5-6 medium beets)

  • 2 Tbsp ghee or butter

  • 2 Tbsp lemon juice (or lime juice)

  • 1 Tbsp Coriander powder


Preparation:

1. Wash and slice the beets in 1/8 to 1/4 slices.

2. Place in a steamer and steam until tender, about 20-25 minutes

3. Place beets in a bowl, and pour melted ghee, lemon juice and coriander powder over them.
