Little Almond Cookies

These sweet little cookies are more healthy than decadent, but they make a sweet treat for kids and travel. In this recipe, the pitta-increasing almonds are balanced with maple syrup and cardamom. Enjoy in moderation.

  • 1 cup finely grounded raw almonds
  • ¼ cup maple syrup (grade b)
  • ¼ teaspoon ground cardamom
  • 2 teaspoons water

Preheat the oven to 300F. Combine all of the ingredients in a food processor or blender. Blend for 2-3 minutes, until the batter becomes smooth. Place parchment paper or oil on your baking sheet (olive, coconut or ghee work well). Spoon out the mixture in half-teaspoon balls, leaving a little space for them to spread. Bake for 20-30 minutes, until golden brown. 

Makes about 15 small cookies.
