Ginger-Carrot Juice

This juice is a great way to start the morning, and can be enjoyed in moderation by all doshas. It is especially good for Kaphas, who benefit from the light, energizing quality of this drink. Vata should avoid too much raw juicing, especially over the Canadian winter. Those with aggravated pittas may want to reduce or moderate their ginger intake over the hot summer months.

Carrots are rich in vitamin A and a good for the liver and for brain function, supporting greater natural resilience to stress. Ginger is considered to be a universal medicine, well known for its effects on the digestive and respiratory systems. It is sattvic in nature and one of the most  supports circulation and the movement of prana in the body.

  • 2 fresh organic apples, chopped
  • 3 whole organic carrots, washed
  • 1 stick of celery
  • 1/2 inch to 1 inch piece of gresh gingeroot, to taste
  • 1/2 cup water
  • juice of 1 lime or 1/2 lemon (optional)
  • a food processor or juicer

Chop and rise all of the ingredients above.

If you have a juicer, simply juice all of the above and serve, adding the water at the end to taste.

If using a food processor, process to a pulp, then press the mixture through a fine strainer.

Serve immediately. Enjoy!
