Coriander Beet Salad


This recipe is always a favourite at potlucks, adding a gorgeous colour to the meal. Beets are powerful liver and blood cleansers, and are believed to be aphrodisiacs.

Balancing for all three doshas, this recipe is especially good for vata (grounding) and kapha (assists in weight management). The coriander mitigates the slightly heating nature of the beet for pitta dosha. 

4 cups washed fresh beets (approx. 5-6 medium-sized beets)
2 tbsp ghee (clarified butter)
2 tbsp lemon or lime juice
1 tbsp coriander powder
Wash and slice the beets into 1/8 to ¼ inch slices.  Place a steamer inside a medium-sized pot with two inches of water on the bottom, and bring water to boil.  Place sliced beets in steamer and steam until tender (soft when poked with a fork), 20-25 minutes. Drain.
Let the beets cool slightly and place inside a serving bowl. Drizzle with ghee, lemon juic and coriander and toss.
Serve warm or at room temperature.
